Ingredients

  • 1 1/2 cup smart grounds (or any ground beef substitute)
  • 1/2 cup (2 slices chopped)fakin bacon tempeh
  • 1 cup chopped onions
  • 1 cup yellow peppers
  • 1 cup garbanzos beans
  • 1 tsp fresh garlic
  • 2 cups cooked rice
  • 2 tsp cajun seasoning
  • 2 tsp vegan Worcestershire sauce
  • 1/2 tsp cayenne pepper (optional if you don't like it hot)

Instructions

Cook rice as per package directions, set aside. In a non-stick pan, heat oil in medium heat, then add grounds and tempeh. Mix for 1 minute add onions, peppers and garlic. Sautéed until onions and peppers become just a bit soft. About 2 minutes. Add garbanzos, cajun seasoning, cayenne pepper and Worcestershire sauce. Mix and blend well then add rice. Mix until you no longer see rice color. Turn the heat down and simmer for 5 minutes.

Notes

Because this serves 4, it could be a great Sunday dinner addition for the family or leftover for the next day. You can replace the rice for Quinoa if you'd like.
