Ingredients

  • 2/3 cup mashed plantains (ripe)
  • 1/2 cup spelt flour
  • 1/2 cup almond milk (or cashew milk)
  • 2 tbsp unrefined coconut oil
  • 1 tsp baking powder
  • 2 tbsp maple syrup
  • 1/2 cup of blueberries

Instructions

In larger bowl, mashed the plantains until creamy. Add all other ingredients (except blueberries) and mix until smooth. Add blueberries and mix. Heat skillet or non-stick pan in medium-high heat and add a bit of coconut oil. Pour batter into small or larger shapes and cook until top begins to bubble. Flip and cook for another minute. Remove them. Stack them on top of one another and serve them with blueberry and maple syrup.
